In order to create bit-for-bit reproducible artefacts, it is necessary
to force the embedded timestamps to a specific value.

The use of the environment variable `SOURCE_DATE_EPOCH` is specified by
<https://reproducible-builds.org/specs/source-date-epoch/> and used by
various Linux distributions like Debian, Arch and Nix.
